Homemade Muesli
1/2c lite EVOO
2T honey
4c whole oats
1/2c bran (wheat/oat)
1/2c coconut
1/2c wheatgerm
1/2c(or more!) crushed nuts
1/2c sunflower seeds
1c various dried fruits (I use sundried apricots (LOTS), cranberries, sultanas/raisins, and other dried berries, but you can use pretty much anything you like)
I also add 1/2 packet of sesame seeds and 1/2c pumpkin seeds and some whole nuts for a bit of extra texture.
Heat oil and honey on stovetop. Combine all other ingredients (except fruit) in baking tray. Mix oil and honey through combined ingredients. Spread evenly on baking tray and bake at 125degreesC for 25 minutes. Stir it a couple of times to make sure it all gets nice and golden. Remove from oven when it's nice and light brown. Leave to cool and stir through all that delicious dried fruit. Serve with yoghurt or milk for a wholesome snack/meal any time of day. YUUUUUUM!!!!

For an extra treat, and if you have a sweet tooth, try putting a teaspoon of honey on top. Frozen berries (thawed) are also good. Mum used to also add in a Hubbards muesli (usually Berry Berry Nice) to add bulk and those little yoghurt raisins. Enjoy!! xo
